Made with mild, dried soy from Wakayama Prefecture in Japan, this variant of our Medagla chocolate introduces a savory touch, similar to flaky salt. The umami flavor enhances the naturally savory profile of this sweet 70% chocolate, which carries complex notes reminiscent of the salty kitchen. Its unique flavor makes it an ideal pairing with a beer!

Friis-Holm Chokolade, founded by Danish chef Mikkel Friis-Holm, aspires to be one of the top chocolate makers globally with the mission: “Best in the world, best for the world.” Mikkel’s passion for chocolate was sparked in the late 90s during his time in San Francisco, where he connected with Scharffenberger Chocolate. In 2007, he began collaborating with Nicaraguan cacao farmers through a Danida-supported project, and those beans remain central to Friis-Holm’s production. After years of honing his craft, Friis-Holm established a factory in Denmark in 2014, where all production has since taken place.
