Taste Profile: Aroma of ripe bearies and vanilla. Taste of wild strawberries and apple. Sweet and floral aftertaste with hint of plum.

Hacienda Sonora Estate has been in Alberto’s family for more than a century. In the 1970s Alberto took over the farm and started planting coffee trees on the majority of the farm, and after a short while coffee was the main source of income. Alberto invested in a washing station to improve the quality of production. He became a pioneer in the then very alternative processing methods honey processing and natural processing. Here he gained experience in how different processing could create different complexities on the flavors in the coffee.The coffee is honey-processed – a partially berry-dried coffee where a lot of pulp is left around the bean as it dries and adds fruity and sweetness to the taste. The color indicates the length of the drying and the amount of fruit that has dried with the bean
