Brew Coffee Like a World Champion: Origami Dripper Recipe

Pour-over coffee is a great way to get the most out of your coffee beans, and the Origami dripper is an excellent choice for a pour-over brewer. Not only is it beautiful and eye-catching, but it is also highly functional and produces a delicious cup of coffee.

The Origami dripper gained popularity after it was used in the World Brewers Cup in 2019 by Du Jianing of China. At the time it was a relatively unknown brewer, and almost overnight, the coffee brewer went from a limited-production item used almost exclusively in Japan, to a globally in-demand brewing device coveted for its quality and design.

The dripper is made from Mino Porcelain and has 20 folded ribs that are a nod to the traditional and whimsical art of origami. The design not only looks great but also creates air channels that increase the flow rate, allowing for better control over the brew.

The Origami Dripper is not just for looks but also highly functional. The wide hole at the bottom of the brewer and the wider top create a faster brew that produces sweeter cups. Origami Brewing Recipe from a World Champion

Presenting the Origami brewer recipe from none other than Ole Kristian Bøen, the 2020 Norwegian Brewers Cup Champ and 2022 World Kokekaffe Champ.

Here Ole Kristian’s go-to recipe using Origami:

Ingredients:

  • 15g coffee beans
  • Water

Instructions:

  1. Grind the coffee beans at a setting of 28 clicks using a Comandante c40 grinder.
  2. Heat your water to 93 degrees Celsius.
  3. Place the ground coffee in a coffee filter in the Origami Dripper.
  4. Pour 50g of water over the coffee grounds, making sure to saturate them completely. Let it sit for 30 seconds. This is called the “bloom” stage.
  5. After 30 seconds, pour another 60g of water over the coffee grounds, for a total of 110g.
  6. Wait until the timer reaches 1:05, then pour another 60g of water over the coffee, for a total of 170g.
  7. Wait until the timer reaches 1:40, then pour another 60g of water over the coffee, for a total of 230g.
  8. Allow the coffee to continue dripping until it has finished brewing. The total brewing time should be between 2:30 and 2:50, depending on the coffee.
  9. Once the coffee has finished brewing, remove the filter and discard the grounds.
