It’s December 8th, and today’s coffee is a washed Kenya from Mjøsen Kaffe.

Why did you choose this coffee for the Advent Calendar?

How to brew

Pour over/ Origami dripper/ Hario V60 filter

30 grams of coffee. Medium ground / 700 microns

Rinse and preheat brewing vessel.

500 gram water @95 degree.

Bloom with 60g of water for 30 seconds. Use 3 equal pours with 146grams. Total brew time aiming for 3 minutes.

Mjøsen Kaffe

Mjøsen Kaffe is located in Hamar, a charming town near Lake Mjøsa, Norway’s largest lake, and one of the hosts of the Lillehammer Winter Olympics in 1994. The roastery was founded in 2019 by Marius and Sverre, later joined by Dave, and has quickly made a name for itself. In 2021, Mjøsen Kaffe earned a bronze medal in the Norwegian Coffee Roasting Championship, competing against some of the best roasteries in the country.

Specializing in light, Nordic-style roasting, Mjøsen Kaffe focuses on specialty coffee with an emphasis on origin and flavor quality. Their commitment to sourcing traceable coffee ensures not only an excellent cup but also fair payment for the farmers. While they don’t run a café themselves, you can find their beans at local shops, cafés, and through direct sales. Their roastery is centrally located in Hamar’s Matkvartalet, a hub for food lovers.
