Processing Method

The coffee cherries are hand-picked at their peak ripeness and then carefully processed to preserve their quality. After harvest, the cherries are held for 48 hours, floated, and depulped. The coffee undergoes a 48-hour dry fermentation before being dried on raised beds for 20 days, achieving an ideal moisture content of 10%.
