Happy Saturday. It’s December 7th, and today’s advent coffee comes from Austrått Kaffebrenneri! We’re thrilled they were ready to deliver for the calendar after recently moving into their new roastery and setting up their new roaster.

Why did you choose this coffee for the Advent Calendar?

Austrått

Austrått Kaffebrenneri, a small yet dedicated roastery, calls Sandnes, near Stavanger, Norway, home. This charming city boasts a rich industrial heritage, once famed for its brickworks and pottery, and later for textiles and bicycles.

Recently relocated to a brand-new roastery, Austrått continues to craft exceptional coffee, focusing on light roast profiles that preserve the beans’ natural character.

    My long-standing dissatisfaction with naturally processed (rotten aka “funky”) coffee has over time evolved into outright dislike of them. But I remain open to changing my mind. This coffee convinces me that not only can it be done well, but that Austrått has indeed accomplished that with this batch, which manages to add a distinctively delicious and clean character to the bean without the “natural” off-aromas and flavors. The process has added just a touch of clean fruitiness and acidity to beans which often (this is pretty consistent across Central America) can lean heavily towards a chocolate, nutty, earthy dark dried-fruit character. Across my drippers, brewing this coffee worked best with the April (see my comment on their brewer on Kaffebox’s website for my recipe), given the April brewer’s ability to maximize in a balanced manner the silky and complex character of the beans. (Origami, by contrast, emphasizes the sweetness.) I take my hat off to Austrått, who have convinced me not to close my mind to what can be accomplished with naturally processed beans roasted expertly. Congratulations! And all thanks go to Kaffebox for making it happen.
