How to brew
KOKEKAFFE (Steeped coffee/ Kettle brew) Use a stove kettle or any kettle over open fire. 50g of coffee, medium drip/ pour over ground, 800g fresh water, add ground coffee into the kettle, pour over hot water 95 degress/ off the boil, then stir 4 times with a spoon, steep for 5 minutes, stir/break crust, gently scoop out/remove 3-4 spoons of leftover foam (bitters), then rest brew for 1 minute, pour slowly into cup. Use a sieve if you want.

Mjøsen Kaffe
Mjøsen Kaffe is located in Hamar, a charming town near Lake Mjøsa, Norway’s largest lake, and one of the hosts of the Lillehammer Winter Olympics in 1994. The roastery was founded in 2019 by Marius and Sverre, later joined by Dave, and has quickly made a name for itself. In 2021, Mjøsen Kaffe earned a bronze medal in the Norwegian Coffee Roasting Championship, competing against some of the best roasteries in the country.
Specializing in light, Nordic-style roasting, Mjøsen Kaffe focuses on specialty coffee with an emphasis on origin and flavor quality. Their commitment to sourcing traceable coffee ensures not only an excellent cup but also fair payment for the farmers. While they don’t run a café themselves, you can find their beans at local shops, cafés, and through direct sales. Their roastery is centrally located in Hamar’s Matkvartalet, a hub for food lovers.
Tasting this blind, I thought to myself: “Central America, likely Honduras; too flavorful to be an El Salvador; not as earthy as a Guatemalan.” Well, it is indeed a delicious washed Pacamara from El Salvador! This is an extremely clean, fresh, very juicy cup with luscious tropical fruit in a structure of milk chocolate. The April brewer balances all of this wonderfully with integrated flavors in a silky body, while the Origami highlights the crisp acidity with more distinct flavor components. In my experience, beans from El Salvador do not get much better than this – most tend to be very good but not terribly exciting, and (sadly) are sometimes harmed by anaerobic fermentation and/or natural processing in an attempt to add and beef up (what would otherwise have been clean) flavors.
