Why did you choose this coffee for the Advent Calendar?

Jacu

Nestled in the picturesque city of Ålesund, Norway, Jacu operates out of a historic transformer station building. Ålesund, a coastal gem at the gateway to the Geirangerfjord, is famed for its art nouveau architecture, rebuilt with flair after the great fire of 1904.

Jacu takes its name from the Jacu bird of South America, a coffee-loving creature known for seeking out the finest coffee cherries. Inspired by this, Jacu meticulously sources exceptional beans from the world’s best plantations, refining every step to create outstanding coffee experiences.

Nice coffee, and I agree that it’s both light and complex.

However, I wonder why you recommend a brewing temperature of 91 degrees?

Normally I’m a few degrees higher than this.
