Taste Profile: Delicate notes of sugarcane, citrus, cherry and milk chocolate
Origin: Brazil, Cerrado Mineiro

Process: Anaerobic/aerobic Honey

Altitude: 1150 masl
Brew recipe
12g of coffee and 200g of soft, filtered water at 95°C.
23 clicks on a Comandante.
- Pour a 40g bloom and agitate gently
- At 1 minute 30 seconds pour to 100g
- Once the bed is almost drained, pour to 150g
- Once the bed is almost drained, pour to 200g
Brew should finish at around 3 minutes.
Daterra
Daterra Coffee, a pioneering coffee farm in Brazil, is renowned for its dedication to sustainable practices and high-quality coffee production. The name “Daterra” translates to “From the earth,” reflecting the company’s deep connection to the land and nature. The farm, established after experimenting with various farming ventures like cattle and avocados, eventually refocused on coffee, recognizing it as a core element of their story.
Founded and led by Luís Norberto Pascoal, a multifaceted entrepreneur, Daterra Coffee stands out for its commitment to creating a product that is both of exceptional quality and sustainably produced. This ethos is evident in their achievements, such as being the first Brazilian farm to receive Rainforest Alliance certification and winning the title of the most sustainable farm by Globo Rural, a prominent agricultural magazine in Brazil, in 2015.
In addition to these accolades, Daterra Coffee has been recognized multiple times for its outstanding coffee. They were a finalist in the Cup of Excellence in 2001, and their coffee was named the best from Brazil by Rainforest Alliance in both 2005 and 2008. Their Espresso Blend was used by World Barista Champions Troels Poulsen and Klaus Thomsen in 2005 and 2006, respectively. Furthermore, in 2008, Illy Café honored Daterra Coffee as a model sustainable farm.
Daterra’s farming practices are founded on continuous research and innovation. Their goal is not just to mitigate the negative impacts of agriculture but also to actively promote earth preservation. This approach is integral to their mission of offering specialty green coffee that respects and nurtures the environment
Clever Coffee
Clever Coffee, founded in 2014 in Denmark, is a prize-winning, B Corp-certified coffee roastery known for its commitment to sustainability and quality. They engage in direct trade with coffee farms globally, focusing on reducing their carbon footprint and using the world’s most eco-friendly coffee roasters. The company began in a garage in Viby, evolving from founder Lars Frello’s passion for specialty coffee. Along with co-owner Lindy Brogaard, they moved operations to Fillerup in 2017, upgrading to a more sustainable roaster in 2020. In 2023, Clever Coffee launched its first net-zero coffee, reflecting its ongoing commitment to environmental responsibility and high-quality coffee

This was unexpected! They are the tinyest beans I ever saw, and tasted super juicy and nice!
Wow, this was amazing! Such a distinguished tropical flavour!
Very interesting one. Would have never guessed this as a brasilian coffee. Mainly because the beans are so tiny, they reminded of ethiopian naturals.
What stood out to me is that this coffee ist intensly fruity with no bitterness whatsoever.
Regarding taste profile, red fruits were most dominant for me (Strawberries).
Do these little beans have a Tootsie Roll center?! Tastes like it 😋
