Deiro Garcia is known to be one of the most innovative producers from the Huila region. As a devoted Harry Potter fan, he named his farm Lord Voldemort – a name that is sure to catch anyone’s attention. He previously studied microbiology and focuses on extended fermentations. Through testing he has learned that certain natural yeast strains can produce a distinctive fermentation and influence the coffees taste profile dramatically. For this unique lot he has isolated yeasts from local yellow fruits and passionfruit. He says that this process accelerates fermentation and enhances the natural taste of the WUSH WUSH varietal without overshadowing it.
Wush Wush is a rare varietal of the coffee plant that comes originally from Ethiopia and is named after the region it originated from, “Wushwush”. The coffee trees themselves producing a small yield. Because these trees have such a small yield, the final product is a highly cared for and sought after. WUSH WUSH is known for its complex and standout flavours.
Now this is a Sunday coffee, because this needed some time to process! Before reading about it, it tasted IPA beer! So something was going on. Weird coffees aren’t always also good, but this was both. Definitely nutmeg and silky smooth mouth feel. 10/10, will take another sip now
I can relate to the ipa beer. Especially on my first brew i tasted something like that too – very hard to describe.
Hard to believe this came out of Columbia! Don’t think I’ve ever had Wushwush before, but it tastes like a light Ethiopian breakfast roast – bright flavor, bold scent, and less punchy than the average cup of yirgacheffe.
The initial roasty fragrance almost fooled me. Silky mouth feel with highly coat-y, almost tannic and viscous, but not dense brew. Noted also reminiscent of tamarind, powdered oolong. The first Wushwush that wushes my palate.
This is a weird one. But not weird in a bad way, more like interesting. In the beginning i was a bit confused, whether its a natural or a washed since i tasted some characteristics of both processes. Brewed it a second time today and really enyojed it. It reminded me of an ethiopian coffee with the bright and floral taste notes but at the same time i found these unusual spicy notes and something very strange that i would describe as hop or as fir trees. Anyone had a similar experience?
